Not sure whether I clicked a wrong button when first setting up our new RS2, or whether it arrived with beta updates enabled, but the device is running on ‘26 beta 1’ . How can I get back to stable released firmware?

To get back on the stable branch, you will need to reflash the unit using our Firmware Reflashing guide, as @jp-drain-sol mentioned. Please note that the reflashing procedure resets the settings and deletes all the data so you might want to download all important data beforehand.
