How can we set GPS to measure X, Y, Z, in the Greek grid (EGSA '87) to work in the state system as we should ?

Currently not possible, but they are working on it, according to other thread-answers.
In the meantime, you could use a data collector with i.e. Fieldgenius

Or you can use Android apps like Mapit GIS. Mapit supports custom EPSG-codes and geoids

what about the antenna configuration (so as to use it in an other app like myrtk or Mapit GIS)

Meanwhile, ReachView works only with WGS84 coordinates system.

Follow this guide to configure a mock location feature on your Android device and use Reach with 3d-party apps.
