We have been using PVC junction boxes. 8in x 8in x 4in

As long as you use waterproof cable glands etc they work great.

Good idea using the Pelican, but how do you switch the battery on and off? Do you have to open the case?

Correct, I was unplugging the USB cable to power off, but of course a switch could easily be wired in. If you are not going to be opening the box, then a clear window might be good so from the outside you can see the indicator of power remaining.
