Using the Navio2 board, have configured it to execute ArduPlane on startup. Could someone refer me to the docs or tell me how I can change the frame type (Flying wing or V-tail etc)

There is no setting for frame type in APM:Plane.
Setup for Vtail or elevon mixing is done in the RC calibration screen or the full parameter list.
